Über Recipe: Mushroom Curry
A while ago when we were discussing a restaurant review, Sidhu, one of our regulars, was surprised at people’s aversion towards mushrooms. In fact he went on to say that his recipe had a great amount of success, specially with the fairer sex, who initially hated mushrooms.
So we did what we always do, asked him for his recipe and he very kindly obliged. We have pictures in case you prefer visuals, Thanks Sidhu.
And it had to pass the ÜD test. So we took to our lab, well my kitchen actually, and followed the instructions. In the words of my brother “You should start cooking regularly”.

Ingredients:

ÜD Note: The ingredients as you all know will vary depending on how many people plan on making it to the dinner, minus the ones who started emptying the old monk earlier in the evening. Step 1: Heat oil in a kadai, add 4-5 red/green Jalapenos, ginger, garlic and seasoning. Add onions and fry till lightly brown. ÜD Note: Being South India, I went with one habanero, and I have 5 words for all you haters “we are like that only”. Step 2: Add washed and drained mushrooms, without any water in them. ÜD Note: Even if they are pre-washed, make sure you wash them again. Please. Step 3: Fry till Mushrooms shrink to less than their original size and color changes to dark brown (add very little water if necessary, to avoid burning). Step 4: Add salt, chilli powder ÜD Note: I skipped the chilli, because I already had enough pepper. Step 5: Add finely chopped tomato and stir. ÜD Note: In this case, I decided to add the tomatoes with the onions in step 1 Step 6: Add whipping cream, keep the flame for 5-8 more min on Medium. Step 7: Add Masala Step 8: Add Cilantro leaves (3-4 basil leaves if you have them, too many leaves give it a very strong smell).
